Falafel

Prepare the Chickpeas
Soak the chickpeas in water overnight. Drain and rinse before using.

Blend the Ingredients
In a food processor, combine soaked chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, black pepper, and flour. Blend until a coarse mixture forms.

Shape the Falafel
Form the mixture into small balls or patties.

Fry the Falafel
Heat oil in a frying pan over medium heat. Fry the falafel until golden brown on all sides, about 5-7 minutes. Drain on paper towels.

Prepare the Vegetables
Chop the romaine lettuce, cucumber, tomatoes, radishes, and green onions.

Mix the Salad
In a large bowl, combine the chopped vegetables and toasted pita bread.

Make the Dressing
In a small bowl, whisk together olive oil, lemon juice, salt, and sumac.

Drizzle the dressing over the salad and toss gently to combine.

Process Until Smooth
Blend until smooth and creamy, adding more water if necessary to achieve desired consistency.

Transfer the hummus to a serving bowl and sprinkle with paprika for garnish.

Cook the Lentils
In a saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for about 15 minutes until lentils are tender.

Cook the Rice
Add rice, salt, and pepper to the lentils. Stir well and add additional water if needed. Cover and cook on low heat for 20 minutes or until rice is cooked.

Knead the Dough
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

Let it Rise
Place the dough in a greased bowl, cover, and let it rise for about 1 hour until doubled in size.

Shape and Bake Pita
Preheat the oven to 475°F (245°C). Divide the dough into small balls, roll out into circles, and bake for about 5-7 minutes until puffed.
