Pita Pockets

    Prepare the Chicken Shawarma

    In a bowl, marinate the chicken breast with olive oil, minced garlic, cumin, paprika, and salt. Let it sit for at least 30 minutes.

    Cook the Chicken

    Grill or sauté the marinated chicken over medium heat until fully cooked, about 7-10 minutes per side. Once cooked, slice thinly.

    Prepare the Falafel

    If using a falafel mix, follow the package instructions to form and fry or bake the falafel until golden brown.

    Assemble the Pita Pockets

    Warm the pita bread slightly, then fill each with lettuce, sliced tomato, cucumber, and your choice of falafel or chicken. Drizzle with tahini sauce.

Fattoush Salad

    Prepare the Pita Croutons

    Cut the pita bread into small triangles and toast in the oven until golden brown.

    Mix the Salad Ingredients

    In a large bowl, combine mixed greens, chopped radishes, halved cherry tomatoes, and diced cucumber.

    Dress the Salad

    In a small bowl, whisk together lemon juice, olive oil, and sumac. Pour over the salad and toss to combine. Add toasted pita croutons before serving.

Mjadarah

    Cook the Lentils

    In a pot, combine lentils and water and bring to a boil. Reduce heat and simmer for about 20 minutes, or until lentils are tender.

    Prepare the Rice

    Add rice to the pot with the lentils and continue to cook for another 20 minutes, or until rice is cooked and water is absorbed.

    Cook the Onion

    In a pan, heat olive oil and sauté sliced onion until golden brown. Stir in cumin and salt.

    Combine Everything

    Once the rice and lentils are cooked, mix in the sautéed onion. Serve warm.

Baklava

    Prepare the Nut Filling

    In a bowl, mix chopped nuts and cinnamon.

    Layer the Phyllo Dough

    Preheat the oven to 350°F (175°C). Brush a baking dish with melted butter, then layer 10 sheets of phyllo dough, brushing each with butter.

    Sprinkle a layer of nut mixture over the dough. Continue layering phyllo and nuts until all ingredients are used, finishing with a top layer of phyllo.

    Cut the baklava into diamond shapes, then bake for about 45 minutes, or until golden brown.
