Cooking Orzo and Beans

Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse with cold water to stop cooking.

While the orzo is cooking, open the can of cannellini beans. Drain and rinse the beans under cold water. Set aside.

In a large mixing bowl, combine the cooked orzo, cannellini beans, diced red bell pepper, sliced green olives, and crumbled feta cheese. Toss gently to mix.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and minced garlic until well combined. Season with salt and black pepper to taste.
