Dough Preparation

Activate the Yeast
In a small bowl, combine warm water (1.5 cups), sugar (1 tsp), and active dry yeast (2 tbs). Stir gently and let it sit for 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tbs). Make a well in the center and pour in the activated yeast mixture and olive oil (2 tbs). Mix until a dough starts to form.

Knead the Dough
Transfer the dough to a floured surface. Knead the dough for about 10 minutes until it is smooth and elastic. If the dough is sticky, sprinkle a little more flour as needed.

Let it Rise
Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until it doubles in size.
Topping and Baking

Prepare the Toppings
In a small bowl, mix za'atar spice mix (4 tbs) with olive oil (4 tbs) until well combined. Set aside.

Shape the Man'oushe
Once the dough has risen, punch it down and divide it into 8-12 equal pieces. Roll each piece into a ball and then flatten it into a disc about 1/4 inch thick.

Add Topping
Spread a generous tablespoon of the za'atar mixture over each disc, leaving a small border around the edges. If using, sprinkle fresh thyme (1 cup) over the za'atar.

Bake the Man'oushe
Preheat your fire hearth oven or conventional oven to 475°F (245°C). Place the topped flatbreads directly on the oven stone or baking sheet. Bake for 8-10 minutes or until they are golden and puffed.

Serve
Remove the man'oushe from the oven and let them cool slightly before serving. Enjoy warm as a snack or with your favorite dips.
