Cooking Couscous

Prepare the Couscous
In a medium saucepan, bring 2 cups of water to a boil. Once boiling, stir in the couscous and a pinch of salt. Remove from heat, cover, and let it sit for about 5 minutes until the water is absorbed.

Fluff the Couscous
After 5 minutes, remove the lid and fluff the couscous with a fork. Set aside to cool.

Combine Ingredients
In a large mixing bowl, combine the cooked couscous, drained chickpeas, diced tomatoes, chopped mint, and chopped parsley.
Seasoning

Add Dressing
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour this dressing over the couscous mixture.

Toss to Combine
Gently toss all ingredients together until well combined and evenly coated with the dressing.
Serving

Serve
Taste and adjust seasoning if necessary. Serve at room temperature or chilled. This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
