Fillo Dough Preparation

    Prepare the Fillo Dough

    Thaw the fillo dough according to package instructions. Preheat the oven to 350°F (175°C). In a small saucepan, melt the unsalted butter over low heat. Add ground cinnamon and stir to combine.

    Layer the Fillo Dough

    On a clean surface, lay down one sheet of fillo dough and brush it generously with the melted butter mixture. Repeat this process with 7-10 sheets, layering and buttering each sheet.

Nut Filling

    Prepare the Nut Filling

    In a food processor, combine walnuts and pistachios. Pulse until finely chopped but not a powder. In a mixing bowl, combine the chopped nuts with granulated sugar and mix well.

    Layer the Nut Filling

    Spread the nut mixture evenly over the prepared fillo dough layers. Then, layer more fillo dough on top (about 5 sheets), brushing each with the butter mixture before adding the next layer.

Final Assembly and Baking

    Cut the Baklava

    Using a sharp knife, cut the layered baklava into diamond or square shapes, ensuring you cut through all layers down to the bottom.

    Bake the Baklava

    Place the baklava in the preheated oven and bake for about 45-50 minutes or until golden brown and crisp.

    Prepare the Syrup

    While the baklava is baking, prepare the syrup. In a saucepan, combine water, granulated sugar, honey, and vanilla extract. Bring to a simmer and cook for about 10 minutes until slightly thickened.

    Soak the Baklava

    Once the baklava is done baking, remove from the oven and immediately pour the hot syrup evenly over the entire baklava. Allow it to soak for at least 2 hours before serving for the best flavor.
