Preparation

  1. 1

    Prepare the Ingredients

Start by gathering all the ingredients. Rinse the lettuce, cherry tomatoes, and cucumber under cold water. Chop the lettuce into bite-sized pieces, halve the cherry tomatoes, and slice the cucumber into thin rounds. Also, slice the red onion into thin rings.

  2. 2

    Cook the Chicken

If not already cooked, grill the chicken breast over medium heat until fully cooked, about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Allow the chicken to rest for a few minutes before slicing it into strips.

  3. 3

    Prepare the Pitas

Warm the whole wheat pita bread in a dry skillet over low heat for about 1-2 minutes on each side until soft and pliable. Alternatively, you can wrap them in aluminum foil and warm them in an oven at 350°F (175°C) for about 10 minutes.

  4. 4

    Assemble the Wraps

Spread a generous tablespoon of hummus on each warm pita. Layer the grilled chicken strips, chopped lettuce, cherry tomatoes, cucumber rounds, and red onion slices on top. Sprinkle with feta cheese, drizzle with olive oil, and season with salt and black pepper to taste.

  5. 5

    Wrap and Serve

Fold the pita in half or roll it up tightly to enclose the filling. Repeat the assembly for all 8 pitas. Serve the pita wraps platter on a large serving tray, optionally garnished with extra hummus and a side of olives.
