Kabob Preparation

Form the Kabobs
Take a handful of the lamb mixture and mold it around the skewer, forming a long sausage shape. Repeat this process until all the mixture is used up. You should have approximately 18 kabobs.

Marinate
Cover the kabobs with plastic wrap and let them marinate in the refrigerator for at least 1 hour, or up to 4 hours for more flavor.

Preheat the Grill
Preheat your grill to medium-high heat (about 400°F or 200°C).

Grill the Kabobs
Place the kabobs on the grill and cook for about 8-10 minutes, turning occasionally, until they are nicely browned and cooked through.

Make the Garlic Paste
In a food processor, combine garlic cloves and salt. Pulse until the garlic is finely minced. Gradually add lemon juice and olive oil while processing until the mixture is smooth and creamy.
