Chicken Marinade

Vegetable Skewers (optional)

Lebanese Garlic Paste

Method

Marinate Chicken

  1. 1

    Prepare the Chicken

Cut the boneless chicken breast into 1-inch cubes and place them in a large mixing bowl.

  2. 2

    Mix Marinade

In the mixing bowl, add olive oil, yogurt, minced garlic, lemon juice, ground cumin, ground coriander, ground paprika, salt, and black pepper. Stir until all ingredients are well combined.

  3. 3

    Marinate Chicken

Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to develop.

Prepare Skewers

  1. 4

    Soak Skewers

If using wooden skewers, soak them in water for 30 minutes to prevent burning.

  2. 5

    Assemble Skewers

Thread the marinated chicken pieces onto skewers, alternating with pieces of bell pepper, red onion, zucchini, and mushrooms if desired.

Grill Kabobs

  1. 6

    Preheat Grill

Preheat your grill to medium-high heat.

  2. 7

    Grill Kabobs

Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Make Lebanese Garlic Paste

  1. 8

    Prepare Garlic Paste

In a food processor, combine garlic cloves and salt. Process until finely minced.

  2. 9

    Emulsify

Slowly add lemon juice and olive oil while the processor is running until you achieve a smooth paste.
