Steak Kabob Preparation

Prepare the Marinade
In a large bowl, combine the olive oil, soy sauce, lemon juice, minced garlic, black pepper, paprika, cumin, and salt. Whisk until well blended.

Marinate the Steak
Cut the sirloin steak into 1-inch cubes and add them to the marinade. Stir to ensure all pieces are coated. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

Prepare the Vegetables
While the steak marinates, cut the bell peppers and red onion into similar-sized pieces (about 1-inch) and set aside. Wash the cherry tomatoes and set them aside as well.

Assemble the Kabobs
Soak the skewers in water for 30 minutes if using wooden skewers. Thread the marinated steak, bell peppers, red onion, and cherry tomatoes onto the skewers, alternating between the ingredients.

Prepare the Garlic Sauce
In a food processor, add the garlic cloves and salt. Pulse until finely minced. With the processor running, slowly drizzle in the olive oil and lemon juice until the mixture is smooth and creamy.

Transfer the whipped garlic sauce to a serving bowl and serve alongside the grilled steak kabobs.
