Cook the Orzo
In a large pot, bring water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and rinse under cold water.

Open the cans of cannellini beans, drain, and rinse them under cold water to remove excess sodium.

Dice the red bell peppers into small pieces and slice the green olives.

In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until combined.

In a large mixing bowl, combine the cooked orzo, cannellini beans, diced red bell peppers, sliced green olives, and crumbled feta cheese.
