Prepare Chicken Kabob Marinade

Marinate Chicken
In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, salt, and black pepper. Add the boneless chicken thighs and mix well to ensure they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight for best results.
Prepare Lamb Kafta

Make Kafta Mixture
In a mixing bowl, combine ground lamb, finely chopped onion, chopped parsley, minced garlic, ground cumin, ground cinnamon, salt, and black pepper. Mix well until all ingredients are evenly incorporated. Shape the mixture into small sausage-like logs or patties.
Prepare Lebanese Garlic Paste

Make Garlic Paste
In a food processor, combine garlic cloves and salt. Pulse until a paste forms. Gradually add lemon juice and olive oil while processing until smooth. Adjust seasoning to taste.
Assemble and Grill Kabobs

Soak skewers in water for 30 minutes to prevent burning. Thread marinated chicken onto skewers, leaving a little space between each piece.
