Making the Dough

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for 10 minutes until foamy.

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour and salt.

Make the Dough
Add the yeast mixture and olive oil to the dry ingredients. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
Preparing the Man'oushe

Preheat Oven
Preheat your fire hearth oven or regular oven to 475°F (245°C).

Divide the Dough
Once the dough has risen, punch it down and divide it into 16-20 equal portions.

Shape the Flatbreads
Roll each portion into a flat disc, about 10-12 inches in diameter.

Add Toppings
Spread a generous amount of za'atar spice mix over each dough disc. Drizzle with olive oil and sprinkle with feta cheese, sliced cherry tomatoes, and fresh thyme.

Bake
Transfer the topped flatbreads to the preheated oven and bake for 8-12 minutes, or until the edges are golden brown and the cheese is slightly melted.

Remove the Man'oushe from the oven and let cool slightly before serving. Enjoy warm!
