Preparation of Ingredients

    Prepare Chickpeas

    If using dried chickpeas, soak 1.5 cups of dried chickpeas in water overnight. The next day, drain and rinse them, then cook them in boiling water for about 1 hour until tender. If using canned chickpeas, simply drain and rinse them.

    Peel Garlic

    Take 4 cloves of garlic and peel them. You can slice them in half to remove the germ for a milder flavor.

    Squeeze Lemons

    Juice enough lemons to yield 1 cup of lemon juice. Strain the juice to remove any seeds.

Blending the Hummus

    Combine Ingredients

    In a food processor, combine the chickpeas, tahini, garlic, lemon juice, cumin, and salt.

    Blend Until Smooth

    Blend the mixture on high until smooth. If the hummus is too thick, add water gradually until the desired consistency is reached.

    Taste and Adjust

    Taste the hummus and adjust the seasoning by adding more salt, lemon juice, or cumin if desired.

Serving the Hummus

    Serve

    Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle with paprika for garnish. Serve with pita bread, fresh vegetables, or crackers.
