Cook the Chicken
In a large pot, boil water and add the chicken breasts. Cook for about 15-20 minutes or until the chicken is fully cooked and no longer pink inside. Remove from heat and let it cool.

Chop the Ingredients
Once the chicken has cooled, chop it into bite-sized pieces. In the meantime, chop the celery and parsley, and measure out the golden raisins and walnuts.

Combine Ingredients
In a large mixing bowl, combine the chopped chicken, celery, parsley, golden raisins, and chopped walnuts.

Add Mayonnaise
Add the light mayonnaise to the bowl and mix thoroughly until all ingredients are well coated.

Serve the Salad
Once mixed, the large chicken salad can be served immediately or chilled in the refrigerator for about 30 minutes before serving. This allows the flavors to meld together.
