In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper. Mix well.

Cut the chicken breast into 1-inch cubes and add to the marinade. Toss to coat. Cover and refrigerate for at least 2 hours or overnight for best results.

Cut bell peppers, red onion, and zucchini into 1-inch pieces. Set aside the cherry tomatoes whole.

In a food processor, combine garlic cloves and salt. Pulse until minced. Slowly drizzle in olive oil while processing until smooth. Add lemon juice and pulse again to combine.
