Select and Cut Cheeses
Begin by selecting a variety of cheeses. Cut the Manchego, Gorgonzola, and Parmesan into bite-sized cubes. Slice the Brie into wedges, and crumble the Feta and Goat cheese.

Arrange Cheeses
On a large cheese board or platter, arrange the cheeses artistically, grouping similar types together while leaving space for garnishes.

Prepare Garnishes
Rinse the mixed olives under cold water and let them drain. Chop the dried apricots into smaller pieces, if desired.

Arrange Garnishes
Fill the gaps around the cheeses with mixed olives, dried apricots, and walnuts. Place sprigs of fresh rosemary for a decorative touch.

Add Honey
In a small bowl, pour the honey and place it in the center of the cheese platter for drizzling over cheeses.
