Preparing the Lamb

Marinate the Lamb
In a bowl, combine the olive oil, minced garlic cloves, ground cumin, ground coriander, ground paprika, salt, black pepper, and lemon juice. Mix well to form a marinade.

Coat the Lamb
Cut the lamb shoulder into pieces and coat the pieces thoroughly with the marinade. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

Cook the Lamb
Preheat your grill or oven to medium-high heat. Cook the marinated lamb pieces for about 15-20 minutes, turning occasionally until they are well browned and cooked through. Let them rest before slicing.

Combine Ingredients
In a bowl, mix the Greek yogurt, grated cucumber, minced garlic clove, dill, lemon juice, and salt. Stir until fully combined and refrigerate until ready to use.
Assembling the Gyros

Prepare the Pita
Warm the pita bread in a skillet or microwave until soft and pliable.

Add the Fillings
Place a generous amount of sliced lamb on each pita. Top with lettuce leaves, sliced tomatoes, and a dollop of tzatziki sauce.

Serve
Fold the pita over the fillings and serve immediately, garnished with additional tzatziki on the side if desired.
