    Mix Dry Ingredients

    In a large mixing bowl, combine the gluten-free all-purpose flour, baking powder, and salt. Whisk together until well blended.

    Combine Wet Ingredients

    In a separate bowl, mix together the water, olive oil, and honey. Stir until the honey is dissolved completely.

    Combine Mixtures

    Pour the wet ingredients into the bowl with the dry ingredients. Stir with a spoon or spatula until a soft dough forms. If the mixture is too dry, add a little more water, one tablespoon at a time.

    Shape the Dough

    On a clean, floured surface (using gluten-free flour), knead the dough gently for about 1 minute until it is smooth. Divide the dough into two equal pieces.

    Roll Out the Dough

    Using a rolling pin, roll each piece of dough into a circle about 1/4 inch thick.

    Cook the Pita

    Heat a non-stick skillet or pan over medium-high heat. Once hot, place one rolled-out dough circle in the skillet. Cook for about 2-3 minutes on each side, or until the pita is golden brown and puffed up. Repeat with the second piece of dough.

    Remove the pita from the skillet and let it cool slightly before serving. Enjoy your gluten-free pita warm!
