Method
Marinated Chicken
- 1
Prepare the Marinade
In a large bowl, combine olive oil, minced garlic, cumin, paprika, turmeric, cinnamon, salt, black pepper, and lemon juice. Mix well.
- 2
Marinate the Chicken
Add the chicken thighs into the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
- 3
- 4
Rest the Chicken
Once cooked, let the chicken rest for 5 minutes before slicing it into strips.
Rice
- 5
Rinse the Rice
Rinse the long-grain rice under cold water until the water runs clear, then drain.
- 6
Cook the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed rice and salt. Reduce heat to low, cover, and cook for approximately 15-20 minutes or until the rice is tender and the water is absorbed.
- 7
Fluff the Rice
Once cooked, remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork before serving.
Salad
- 8
Prepare the Vegetables
In a mixing bowl, combine the diced cucumber, diced tomato, finely chopped red onion, and chopped parsley.
- 9
Dress the Salad
Drizzle olive oil and lemon juice over the salad mixture. Season with salt and black pepper to taste. Toss gently to combine.
- 10
Chill the Salad
Let the salad sit for about 10 minutes before serving to allow the flavors to meld.
Garlic Sauce
- 11
Make the Garlic Sauce
In a small bowl, combine minced garlic, mayonnaise, lemon juice, and salt. Stir well until smooth and creamy.
- 12
Chill the Sauce
Refrigerate the garlic sauce for at least 15 minutes before serving to enhance the flavors.
