Hummus and Veggies

In a large bowl, combine olive oil, minced garlic, cumin, coriander, paprika, salt, and black pepper. Add the chicken thighs and coat evenly. Cover and marinate in the refrigerator for at least 1 hour, or preferably overnight.

Marinate the Chicken

Preheat a grill or skillet over medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C). Allow to rest for 5 minutes before slicing.

Cook the Chicken

In a small bowl, mix together Greek yogurt, lemon juice, and diced cucumber. Season with salt and pepper to taste. Refrigerate until serving.

Prepare the Tzatziki Sauce

On a large platter, arrange sliced chicken, diced tomatoes, sliced red onion, and chopped parsley. Serve with pita bread and tzatziki sauce on the side.

Once the chicken is cooked, let it rest for a few minutes before slicing it thinly. Serve the sliced shawarma on a platter alongside the cooked rice and a side of fresh vegetables such as cucumber, tomatoes, and lettuce.

In a food processor, combine walnuts, almonds, sugar, and cinnamon. Pulse until finely chopped.

Prepare the Nut Filling

Thaw the filo dough according to package instructions. Preheat the oven to 350°F (175°C).

Brush a 9x13 inch baking dish with melted butter. Layer 8 sheets of filo dough, brushing each sheet with melted butter before adding the next. Sprinkle a layer of the nut mixture over the dough.

Layer the Filo

Repeat the layering process (2 sheets of filo, brush with butter, add nut mixture) until all nuts are used. Top with 8 more sheets of filo, brushing each with butter.

Using a sharp knife, cut the baklava into diamond or square shapes. Bake in the preheated oven for about 45-50 minutes, or until golden brown.

While the baklava is baking, combine honey, water, and remaining sugar in a saucepan. Bring to a boil and simmer for about 10 minutes. Remove from heat and let cool.

Make the Syrup

Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup over the hot baklava. Let it soak for several hours or overnight before serving.
