    Chop the Vegetables

    Peel and chop the sweet potatoes into bite-sized cubes. Slice the carrots into thin rounds. Dice the onion into small pieces. Cut the broccoli into florets and slice the zucchini into half-moons.

Cooking

    Sauté the Onions

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until translucent.

    Add the Sweet Potatoes and Carrots

    Add the chopped sweet potatoes and carrots to the pot. Stir well and cook for another 5 minutes, allowing the vegetables to soften slightly.

    Add Curry Powder

    Sprinkle the curry powder over the vegetables and stir to coat evenly. Cook for about 1-2 minutes until fragrant.

    Add Coconut Milk

    Pour in the can of coconut milk and stir well, scraping up any bits stuck to the bottom of the pot. Bring the mixture to a gentle simmer.

    Add Broccoli and Zucchini

    Once the mixture is simmering, add the broccoli florets and sliced zucchini. Stir to combine and cook for an additional 10-15 minutes until all vegetables are tender.

    Season and Serve

    Season with salt and black pepper to taste. Serve hot as a main dish or with rice.
