    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces, approximately 1-inch cubes.

    Soak the Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

Making the Teriyaki Sauce

    Combine Ingredients

    In a medium saucepan, combine soy sauce, mirin, sake, brown sugar, minced garlic, grated ginger, and sesame oil.

    Simmer the Sauce

    Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes until slightly thickened.

    Cool the Sauce

    Remove the saucepan from heat and allow the teriyaki sauce to cool slightly.

Grilling the Yakitori

    Skewer the Chicken

    Thread the chicken pieces onto the soaked wooden skewers, leaving a little space between each piece.

    Preheat the Grill

    Preheat your grill or grill pan over medium-high heat.

    Grill the Chicken

    Place the skewers on the grill and cook for about 3-4 minutes on each side, brushing with teriyaki sauce during cooking.

    Ensure the chicken is cooked through and no longer pink inside. It should reach an internal temperature of 165°F (75°C).

    Once cooked, remove the skewers from the grill and brush with additional teriyaki sauce if desired. Serve hot.
