    Chop the Vegetables

    Wash and chop the mushrooms, onions, tomatoes, and bell peppers into small, uniform pieces.

    Beat the Eggs

    In a bowl, crack the eggs and beat them well using a whisk or fork. Season with salt and black pepper.

    Sauté the Vegetables

    In a non-stick skillet, heat olive oil over medium heat. Add the chopped onions and bell peppers first, sautéing for about 2-3 minutes until they begin to soften. Next, add the mushrooms and tomatoes, cooking for an additional 3-4 minutes until all vegetables are tender.

    Add the Eggs

    Pour the beaten eggs over the sautéed vegetables in the skillet. Reduce the heat to low and let the eggs cook undisturbed for about 4-5 minutes.

    Add Cheese and Finish Cooking

    Once the eggs are mostly set, sprinkle your choice of cheese evenly over the top. Cover the skillet with a lid and cook for an additional 2-3 minutes until the cheese is melted and the eggs are fully cooked.

    Carefully slide the omelet onto a plate, folding it in half if desired. Serve warm and enjoy your Volcano Omelet!
