Method

Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium-sized pot, combine the rinsed rice and water. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the water is absorbed. Remove from heat and let it sit covered for another 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Allow it to cool to room temperature.

Prepare Vegetables

    Slice the Vegetables

    Using a sharp knife, julienne the cucumber, carrot, bell pepper, and avocado into thin strips.

Assemble the Maki

    Lay Out Nori

    Place a nori sheet, shiny side down, on a bamboo sushi mat or a clean surface.

    Spread the Rice

    With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Filling

    Arrange a few strips of each vegetable across the center of the rice.

    Roll the Sushi

    Start rolling the sushi tightly from the bottom using the mat to help. Roll until you reach the bare edge of the nori, wet it slightly with water to seal, and complete the roll.

    Slice the Roll

    Using a sharp, wet knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to keep it clean.

Serve

    Plating the Sushi

    Arrange the sliced maki on a plate. Sprinkle sesame seeds on top and serve with soy sauce and wasabi on the side for dipping.
