Preparation

    Prepare the Vegetables

    Wash and chop the carrot, bell pepper, broccoli, and zucchini into bite-sized pieces. Slice the green onions, separating the white and green parts.

    Prepare the Sauce

    In a small bowl, combine soy sauce, sesame oil, honey (or maple syrup), minced garlic, and grated ginger. Stir well to combine and set aside.

Cooking

    Sauté the Vegetables

    Heat a large skillet or wok over medium-high heat. Add a splash of oil if desired, then add the chopped carrots and bell peppers. Sauté for 2-3 minutes until slightly softened.

    Add Remaining Vegetables

    Add broccoli florets and zucchini to the skillet. Continue to sauté for another 3-4 minutes until all vegetables are tender-crisp.

    Add Sauce

    Pour the prepared sauce over the vegetables and toss to coat evenly. Cook for an additional 1-2 minutes until everything is heated through.

Serving

    Serve the Donburi

    Spoon the cooked rice into bowls and top with the sautéed vegetable mixture. Garnish with the green parts of the green onions. Serve immediately.
