Prepare the Udon Noodles

    Cook Udon Noodles

    Bring 1 liter of water to a boil in a large pot. Add the udon noodles and cook according to package instructions, typically 8-10 minutes, until tender. Once cooked, drain and rinse under cold water. Set aside.

Make the Won Ton Filling

    Mix Filling Ingredients

    In a mixing bowl, combine ground pork, chopped shrimp, green onions, garlic, ginger, soy sauce, and sesame oil. Mix until well combined.

    Fill Won Ton Wrappers

    Take a won ton wrapper and place about 1 teaspoon of the filling in the center. Moisten the edges with water, fold the wrapper in half to form a triangle, and pinch the edges to seal. You can also bring the two corners together and seal them for a different shape. Repeat with remaining wrappers and filling.

Prepare the Soup

    Make the Broth

    In a large pot, combine chicken broth, soy sauce, and mirin. Bring to a simmer over medium heat. Taste and adjust with salt and pepper as desired.

    Cook the Won Tons

    Add the filled won tons to the simmering broth and cook for about 5-7 minutes, or until the won tons float to the surface and are cooked through.

Serve

    Assemble the Dish

    In a bowl, place a serving of cooked udon noodles. Ladle the won ton soup over the noodles. Garnish with sliced green onions and strips of nori before serving.
