Method

Preparing Udon Noodles

    Cook Udon Noodles

    In a large pot, bring 2 liters of water to a boil. Add the udon noodles and cook according to package instructions, usually around 8-10 minutes, until they are tender but still chewy.

    Drain and Rinse

    Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process. Set aside.

Making Soup Broth

    Prepare Dashi Broth

    In a separate pot, bring 4 cups of dashi stock to a gentle simmer over medium heat.

    Season the Broth

    Add 3 tablespoons of soy sauce, 2 tablespoons of mirin, and 1 teaspoon of salt to the dashi. Stir well to combine and allow to simmer for an additional 5 minutes.

    Add Green Onions

    Chop the green onions and add them to the broth. Simmer for another 2 minutes.

Assembling the Dish

    Serve Noodles and Broth

    In a bowl, place a portion of the udon noodles. Ladle the hot broth over the noodles.

    Garnish with Nori

    Tear the nori sheets into strips and place them on top of the noodles and broth.

    Add Toppings

    Add any optional toppings such as soft-boiled eggs, tempura, bok choy, and mushrooms as desired.

    Serve immediately while hot and enjoy your delicious udon soup with noodles!
