Preparing the Soup Base

    Boil Water

    In a large pot, bring 4 cups of water to a boil over medium-high heat.

    Add Aromatics

    Once the water is boiling, add the 2 stalks of chopped lemongrass and the 5 kaffir lime leaves. Let it simmer for about 5 minutes to infuse the flavors.

    Add Fish Sauce and Thai Chili Paste

    Stir in 3 tablespoons of fish sauce and 2 tablespoons of Thai chili paste (Nam Prik Pao) into the pot.

    Add Vegetables

    Add the sliced mushrooms and tomato wedges into the soup. Let it cook for an additional 5 minutes.

Cooking the Protein

    Add Chicken

    Add the thinly sliced chicken breast to the pot and cook until it's no longer pink, about 4-5 minutes.

    Add Shrimp

    Next, add the peeled and deveined shrimp. Cook until they turn pink and opaque, about 3-4 minutes.

Finishing Touches

    Add Cilantro

    Stir in 1 cup of chopped fresh cilantro and let it simmer for another 2 minutes.

    Season with Lime Juice

    Before serving, add the juice of 2 limes and mix well to balance the flavors.
