Cooking Shrimp and Tofu

    Cook the Shrimp

    In a pot of boiling water, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove from heat, drain, and set aside.

    Prepare the Tofu

    In a non-stick skillet over medium heat, add a little oil. Add the sliced tofu and cook for about 5-7 minutes, turning occasionally, until golden brown on all sides. Remove from heat and let cool.

Assembling the Rolls

    Prepare Rice Paper Wrappers

    Fill a large shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until softened. Lay it flat on a clean surface.

    Fill the Rolls

    In the center of the softened rice paper, place a few shrimp, a strip of tofu, several slices of avocado, a handful of cilantro, mint leaves, julienned carrot, and cucumber.

    Roll it Up

    Fold the sides of the rice paper over the filling, then roll from the bottom up tightly. Repeat with the remaining wrappers and filling.

Preparing the Dipping Sauce

    Mix the Sauce Ingredients

    In a small bowl, combine peanut butter, soy sauce, lime juice, honey, water, and crushed red pepper flakes. Whisk until smooth and adjust consistency with more water if needed.
