Prepare Seafood Filling

    Chop Ingredients

    In a mixing bowl, combine the peeled shrimp, fish cake, minced garlic, fish sauce, chopped cilantro, salt, and black pepper. Mix well until all ingredients are evenly distributed.

    Blend Mixture

    For a smoother filling, you can blend the mixture in a food processor until it reaches a paste-like consistency, but this step is optional.

Assemble Rolls

    Prepare Wrappers

    Lay out the spring roll wrappers on a clean surface. Keep a damp cloth over the wrappers to prevent them from drying out.

    Fill and Roll

    Place about 1-2 tablespoons of the seafood filling near the bottom edge of a wrapper. Fold the sides in and roll it up tightly. Seal the edge with a little water to ensure it stays closed.

    Repeat

    Continue filling and rolling the remaining wrappers until all the filling is used.

Fry Rolls

    Heat Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until hot (approximately 180°C or 350°F).

    Carefully add the rolls to the hot oil, frying in batches to avoid overcrowding. Fry until they are golden brown and crispy, about 3-4 minutes per side.

    Drain and Serve

    Remove the rolls from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your choice of dipping sauce.
