Tempura Batter
Shrimp and Vegetables
For Serving
Method
Prepare Tempura Batter
- 1
Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Whisk together until well combined.
- 2
Prepare Shrimp and Vegetables
- 3
Prepare Shrimp
Pat the shrimp dry with paper towels to remove excess moisture. This helps the batter adhere better.
- 4
Prepare Vegetables
Slice the sweet potato, zucchini, carrot, and green bell pepper into thin, even slices to ensure even cooking.
Fry Tempura
- 5
Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter in; it should sizzle and float to the surface.
- 6
Fry Shrimp and Vegetables
Dip the shrimp and vegetable slices into the tempura batter, allowing excess to drip off. Carefully place them into the hot oil, frying in batches to avoid overcrowding. Fry until golden and crispy, about 2-3 minutes, then remove and drain on paper towels.
Assemble and Serve
- 7
Prepare Rice
While the tempura is frying, cook the rice according to package instructions. Fluff with a fork once cooked.
- 8
Serve
In a bowl, place a serving of cooked rice. Top with the tempura shrimp and vegetables. Drizzle with soy sauce and mirin, and garnish with chopped green onions.
