Tonkatsu

    Prepare the pork

    Pat the pork loin chops dry with paper towels. Season both sides with salt and black pepper.

    Bread the pork

    Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each pork chop in flour, dip in eggs, and coat with panko, pressing gently to adhere.

    Fry the pork

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded pork chops and fry for 4-5 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Miso Soup

    Prepare the dashi

    In a medium pot, bring the dashi stock to a simmer over medium heat.

    Add miso

    In a small bowl, mix miso paste with a ladleful of hot dashi to create a smooth mixture. Stir this back into the pot of dashi.

    Add tofu and seaweed

    Cut the tofu into small cubes and add to the soup along with the wakame. Simmer for an additional 2-3 minutes.

    Garnish

    Slice the green onions and sprinkle on top of the soup before serving.

Green Salad

    Prepare the vegetables

    Wash and dry the mixed greens. Slice the cucumber and julienne the carrot.

    Assemble the salad

    In a large bowl, combine the mixed greens, cucumber, and carrot. Drizzle with salad dressing and toss gently to coat.

Rice with Furikake

    Rinse the rice

    Rinse the short-grain rice under cold water until the water runs clear. Drain well.

    Cook the rice

    In a rice cooker or pot, combine the rinsed rice and water. If using a rice cooker, follow the manufacturer's instructions. If using a pot, bring to a boil, then cover and reduce heat to low, cooking for about 18-20 minutes.

    Finish with furikake

    Once the rice is cooked, fluff it with a fork and sprinkle furikake seasoning on top before serving.
