Method

Prepare the Mackerel
Rinse the mackerel fillets under cold water and pat them dry with paper towels.

Cook the Mackerel
Heat a grill or grill pan over medium heat. Cook the mackerel fillets for about 4-5 minutes on each side or until cooked through and slightly charred.
Miso Soup

Prepare Dashi Stock
In a pot, bring the dashi stock to a simmer over medium heat.

Add Miso Paste
Dissolve the miso paste in a small bowl with a few tablespoons of the hot dashi stock, then stir it back into the pot.

Add Tofu and Seaweed
Cut the tofu into small cubes and add them to the soup along with the seaweed. Simmer gently for 5 minutes.

Finish with Green Onions
Chop the green onions and add them to the soup just before serving.
Green Salad

Prepare the Vegetables
Wash and dry the mixed salad greens, cherry tomatoes, and cucumber. Halve the cherry tomatoes and slice the cucumber thinly.

Assemble the Salad
In a large bowl, combine mixed greens, cherry tomatoes, and cucumber. Drizzle with sesame dressing and toss gently to combine.
Rice with Furikake

Prepare the Rice
If not already cooked, prepare the white rice according to package instructions.

Add Furikake
Once the rice is cooked, fluff it with a fork and sprinkle furikake seasoning on top before serving.
