Preparing Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or saucepan, combine the rinsed rice and water. Cook according to rice cooker instructions or bring to a boil, reduce heat, cover, and simmer for 18-20 minutes.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the rice and gently fold it in with a spatula. Allow the rice to cool to room temperature.

Preparing the Filling

    Prepare the Ahi Tuna

    Cut the sashimi-grade Ahi tuna into thin strips, about 1/2 inch wide.

    Slice the Vegetables

    Julienne the cucumber and slice the avocado into thin strips.

Assembling the Hosomaki

    Prepare the Rolling Mat

    Place a bamboo sushi rolling mat on a flat surface and lay a sheet of nori, shiny side down, on top of it.

    Spread the Rice

    Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add the Fillings

    Place a few strips of Ahi tuna, cucumber, and avocado in a line along the center of the rice.

    Roll the Sushi

    Lift the edge of the mat closest to you and roll it away from you, pressing gently but firmly to shape the roll. Continue rolling until the nori is sealed with a bit of water.

    Slice the Roll

    Using a sharp knife, slice the roll into 6 equal pieces, wiping the knife with a damp cloth between cuts to keep it clean.

Serving

    Plate the Hosomaki

    Arrange the sliced hosomaki on a plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
