Sprinkle the Opakapaka fillets with salt and black pepper on both sides.

In a large skillet, heat olive oil over medium-high heat.

While the fish is cooking, chop the red and green bell peppers into bite-sized pieces. Mince the garlic cloves.

In a bowl, combine pineapple juice, soy sauce, brown sugar, cornstarch, and water. Whisk until smooth.

Pour the sauce mixture into the skillet with the sautéed vegetables. Stir well and bring to a simmer. Cook for 2-3 minutes until the sauce thickens.

Combine Fish and Sauce
Return the cooked Opakapaka fillets to the skillet and gently coat them with the sweet and sour sauce. Cook for an additional minute to heat through.
