Poke Bowl Base

Kalbi (Grilled Beef Short Ribs)

Method

Prepare the Poke Bowl Base

    Cook the Sushi Rice

    Rinse sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot and cook according to rice cooker instructions or bring to a boil, then cover and simmer for 20 minutes until water is absorbed.

    Season the Rice

    In a small saucepan, combine rice vinegar, sugar, and salt over low heat until dissolved. Once the rice is cooked, transfer it to a large bowl and fold in the vinegar mixture. Allow to cool to room temperature.

Prepare the Kalbi

    Marinate the Beef

    In a bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil. Add the beef short ribs to the marinade, cover, and refrigerate for at least 1 hour, preferably overnight.

    Grill the Beef

    Preheat your grill or grill pan over medium-high heat. Remove the beef from marinade and grill for about 4-5 minutes on each side or until cooked to your desired doneness. Let rest for a few minutes before slicing.

    Garnish the Beef

    Sprinkle chopped green onions and sesame seeds over the grilled beef before slicing.

Prepare the Seafood Toppings

    Prepare the Fish

    Dice the sushi-grade tuna and salmon into bite-sized cubes. Slice the avocado, cucumber, and radishes thinly.

Assemble the Poke Bowl

    Layer the Ingredients

    In serving bowls, start with a base of sushi rice. Top with grilled kalbi, diced tuna, diced salmon, avocado, cucumber, and radishes.

    Add Garnishes

    Finish the poke bowl with pickled ginger, wasabi, and nori strips.
