    Thinly slice the beef sirloin or chicken breast against the grain. This ensures tenderness.

    Chop the napa cabbage into bite-sized pieces, slice the shiitake mushrooms, chop the green onions into 1-inch pieces, and julienne the carrot.

    Cut the Tofu

    Cut the firm tofu into cubes.

Cooking the Sukiyaki

    Prepare the Broth

    In a large skillet or stovetop pot, combine the soy sauce, mirin, sake, and dashi stock. Bring to a gentle simmer over medium heat.

    Cook the Protein

    Add the sliced beef or chicken to the simmering broth. Cook until the meat is fully cooked through, about 3-5 minutes.

    Add the Vegetables

    Add the napa cabbage, shiitake mushrooms, green onions, carrot, and tofu to the pot. Simmer for an additional 5-7 minutes, until the vegetables are tender.

    While the sukiyaki is simmering, crack the eggs into a small bowl. You can either serve them raw for dipping or lightly scramble them in a separate pan.
