Preparing the Fries

Cutting the Potatoes
Wash and peel the Russet potatoes. Cut them into sticks about 1/4 inch thick.

Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Drain and pat the potatoes dry with a kitchen towel. This helps achieve crispy fries.

Cooking the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and let it cool, then crumble into small pieces.

Chopping Chives
Finely chop the chives and set aside.

Fried Garlic Preparation
Thinly slice garlic cloves and fry them in oil until golden brown and crispy. Drain on paper towels.
Making the Garlic Aioli

In a bowl, combine mayonnaise, lemon juice, minced garlic, and salt. Mix well until smooth.
Assembly

Place a generous serving of fries on a platter. Top with sautéed mushrooms, crumbled bacon, and shredded cheese.
