Method

Preparing the Fries

    Cutting the Potatoes

    Wash and peel the Russet potatoes. Cut them into sticks about 1/4 inch thick.

    Soaking

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Drying

    Drain and pat the potatoes dry with a kitchen towel. This helps achieve crispy fries.

    Frying the Potatoes

    In a large pot, heat vegetable oil over medium-high heat. Fry the potatoes in batches for about 5-7 minutes until golden brown. Remove and drain on paper towels. Season with salt.

    Cooking the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and let it cool, then crumble into small pieces.

    Sautéing the Mushrooms

    In the same skillet, add chopped mushrooms and sauté for about 5-7 minutes until browned. Remove from heat.

    Finely chop the chives and set aside.

    Thinly slice garlic cloves and fry them in oil until golden brown and crispy. Drain on paper towels.

Making the Garlic Aioli

    In a bowl, combine mayonnaise, lemon juice, minced garlic, and salt. Mix well until smooth.

Assembly

    Place a generous serving of fries on a platter. Top with sautéed mushrooms, crumbled bacon, and shredded cheese.
