Baked Potato Preparation

    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Scrub the russet potatoes under cold water and pat them dry with a towel.

    Season the Potatoes

    Pierce each potato with a fork several times, then rub them with olive oil, salt, and black pepper to ensure they are evenly coated.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for 45-60 minutes or until they are tender when pierced with a fork.

Garlic Aioli Preparation

    Make the Aioli

    In a medium bowl, combine mayonnaise, minced garlic, lemon juice, olive oil, and salt. Mix well until smooth and adjust seasoning to taste.

Topping Assembly

    Top the Potatoes

    Once the potatoes are done baking, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently squeeze the sides to open them.

    Add the Toppings

    Spoon a generous amount of garlic aioli into each potato, followed by shredded cheese, crumbled bacon, sautéed mushrooms, and a dollop of sour cream.
