Method

To Prepare the Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed sushi rice and water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for about 20 minutes until water is absorbed.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, gently fold this mixture into the rice using a wooden paddle. Allow the rice to cool to room temperature.

To Prepare the Ahi Poke

    Cut the Tuna

    Dice the Ahi tuna into small cubes, approximately 1/2 inch in size.

    Mix the Ingredients

    In a mixing bowl, combine the diced Ahi tuna, soy sauce, sesame oil, sriracha sauce, chopped green onions, and sesame seeds. Mix gently to coat the tuna evenly.

To Assemble the Temaki

    Prepare the Nori Sheet

    Lay the nori sheet shiny side down on a clean surface or bamboo mat.

    Add Sushi Rice

    Place a small amount of sushi rice (about 2 tablespoons) on the bottom left corner of the nori sheet. Press it down gently.

    Add Ahi Poke Mixture

    Spoon a portion of the Ahi poke mixture over the rice.

    Add Garnishes

    Place a few slices of avocado and radish on top of the poke mixture.

    Roll the Temaki

    Starting from the bottom left corner, roll the nori sheet diagonally upwards to form a cone shape. Moisten the edge with a little water to seal.
