Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes, or until all water is absorbed.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Poke Mixture

    Dice Ahi Tuna

    Cut the sushi-grade Ahi tuna into small 1/2-inch cubes and place them in a mixing bowl.

    Mix Ingredients

    Add soy sauce, sesame oil, Sriracha sauce, chopped green onions, and toasted sesame seeds to the diced tuna. Mix gently to combine. Season with sea salt to taste.

Assemble Nigiri

    Form Sushi Rice

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape.

    Add Poke Topping

    Place a spoonful of the poke mixture on top of each rice oval, pressing down gently to adhere.

    Add Garnish

    Optionally, wrap a small strip of nori around the nigiri for added flavor and presentation. Serve with wasabi and pickled ginger on the side.
