Rice Preparation

Rinse the Rice
Place sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a rice cooker or pot, combine rinsed rice and 2.5 cups of water. Cook according to your rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice, being careful not to mash the grains. Let it cool to room temperature.

Slice the Spam
Open the can of Spam and slice it into 8 equal pieces (about 1/2 inch thick).

Cook the Spam
In a skillet, heat vegetable oil over medium heat. Add Spam slices and cook until golden brown and crispy on both sides, about 2-3 minutes per side.

Glaze the Spam
In a small bowl, mix soy sauce and mirin. Brush this mixture onto the cooked Spam slices and let them caramelize for an additional minute on each side.

Prepare Nori
Lay a nori sheet shiny side down on a clean, flat surface. Wet your hands to prevent sticking.

Add Rice
Take about 1/2 cup of seasoned rice and shape it into a rectangle (about the size of the Spam slices). Place this rice rectangle on the nori sheet.

Add Spam
Place a piece of glazed Spam on top of the rice.

Wrap the Musubi
Using the nori, fold the sides over the rice and Spam to wrap them tightly. You can use a little water on the edges of the nori to help it stick.

Sprinkle sesame seeds on top of the wrapped musubi for added flavor and texture.
