Prepare the Rice
Rinse 1.5 cups of jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, typically using a 1:1.5 rice-to-water ratio in a pot or rice cooker.

Prepare the Crab
If the snow crab claws are not pre-cooked, boil them in salted water for about 5-7 minutes until cooked. Allow them to cool slightly before handling.

Sauté Vegetables
In a large skillet or wok, heat 2 tablespoons of oil over medium heat. Add the diced onion and bell pepper. Sauté for 3-4 minutes until softened.

Incorporate Curry Powder
Stir in 2 tablespoons of yellow curry powder, mixing well to coat the vegetables. Cook for another minute.

Add Crab and Coconut Milk
Gently add the snow crab claws to the skillet, followed by 400 ml of coconut milk. Stir to combine all ingredients.

Season the Curry
Add 1 tablespoon of fish sauce, 1 teaspoon of sugar, and salt and black pepper to taste. Bring the mixture to a gentle simmer and cook for 5-7 minutes, allowing the flavors to meld.

Finish with Cilantro
Once cooked, remove from heat and stir in 0.5 cups of chopped cilantro.

Serve the snow crab claw curry hot over the cooked jasmine rice.
