Prepare the Rice

Rinse the Rice
Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.

Season the Rice
Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold to combine. Allow it to cool to room temperature.

Prepare the Sesame Seeds
Lightly toast the sesame seeds in a dry skillet over medium heat for a few minutes until golden and fragrant.
Assemble the Musubi

Cut Nori Sheets
Cut each nori sheet in half, creating 8 rectangles.

Shape the Rice
Wet your hands to prevent sticking. Take a handful of seasoned rice and form it into a rectangular block about the size of the nori sheets.

Place a few strips of cucumber, avocado, and carrot on top of the rice block. Sprinkle toasted sesame seeds over the fillings.

Wrap the Musubi
Carefully lift the nori sheet and wrap it around the rice and filling, sealing the edges with a little water. Repeat with remaining rice and fillings.
