    Cook the Macaroni

    Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente, usually about 8-10 minutes. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside to cool.

Vegetable Preparation

    Chop the Vegetables

    While the macaroni is cooling, prepare the vegetables. Dice the celery, red bell pepper, and chop the green onions. If using, chop the hard-boiled eggs. Set aside.

Dressing Preparation

    In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper. Whisk until smooth and well combined.

    Add the cooled macaroni, diced vegetables, sweet pickle relish, and any optional add-ins (hard-boiled eggs and/or crumbled bacon) to the bowl with the dressing. Gently fold the ingredients together until everything is evenly coated with the dressing.

Chill and Serve
