Method

Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse the sushi rice under cold water until the water runs clear, then drain. In a rice cooker, add the rinsed rice and 1.25 cups of water. Cook according to the manufacturer's instructions.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold to combine. Allow the rice to cool to room temperature.

Prepare Shrimp Tempura

    Heat Oil

    In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Prepare Batter

    In a bowl, combine tempura batter mix with cold water. Stir until just combined; do not overmix.

    Fry Shrimp

    Dip each shrimp into the tempura batter, allowing excess to drip off. Carefully place the shrimp in the hot oil and fry for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Assemble Temaki

    Prepare Nori

    Place a nori sheet on a clean surface, shiny side facing down.

    Add Rice and Fillings

    Wet your hands to prevent sticking, then grab a handful of sushi rice and spread it onto the lower third of the nori. Add a few pieces of shrimp tempura, avocado slices, and cucumber strips.

    Roll and Serve

    Starting from the bottom, roll the nori up and over the fillings to form a cone shape. Serve with soy sauce and wasabi on the side.
