Prepare Shrimp

    Clean the Shrimp

    Rinse the shrimp under cold water and pat them dry with paper towels.

Tempura Preparation

    Make Tempura Batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, and baking powder. In a separate bowl, mix the ice-cold water and egg yolk. Gradually combine the wet ingredients with the dry ingredients, mixing until just combined. Do not over-mix; the batter should be slightly lumpy.

Panko Preparation

    Prepare Panko Coating

    In a shallow bowl, place the all-purpose flour. In another bowl, place the beaten egg. In a third bowl, place the panko breadcrumbs. Dredge each shrimp in the flour, dip in the beaten egg, and then coat in the panko breadcrumbs, pressing gently to adhere.

Frying

    Heat the Oil

    In a large, deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    For tempura shrimp: Dip the cleaned shrimp into the tempura batter and carefully place them in the hot oil. Fry for 2-3 minutes or until golden brown. For panko shrimp: Carefully add the breaded shrimp to the hot oil and fry for 3-4 minutes or until golden brown and crispy.

    Drain the Shrimp

    Using a slotted spoon, remove the shrimp from the oil and place them on a plate lined with paper towels to drain excess oil.

Prepare Dipping Sauce

    Mix the Sauce

    In a small bowl, combine the soy sauce, wasabi, and lemon juice. Stir well to mix all ingredients.

Serve

    Plate and Enjoy

    Arrange the fried shrimp on a serving platter and serve hot with the dipping sauce on the side.
