Tempura Batter Preparation

    Make the Batter

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add in the ice-cold water while whisking until the batter is smooth and has no lumps. Set aside.

Ahi Preparation

    Prepare the Ahi

    Cut the fresh Ahi tuna into bite-sized pieces. Season with salt and pepper. Take a shiso leaf, place a piece of Ahi in the center, and wrap the leaf around the fish tightly. Repeat until all Ahi is wrapped.

Dashi Pickled Onions

    Pickle the Onions

    Thinly slice the red onion and place in a bowl. In a separate bowl, combine the dashi stock, rice vinegar, sugar, and salt. Pour this mixture over the sliced onions and let them sit for at least 30 minutes to pickle.

Frying

    Fry the Shiso Bites

    Heat oil in a deep pan over medium-high heat. Dip each shiso-wrapped Ahi piece into the tempura batter, allowing excess to drip off, then carefully place it in the hot oil. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Assembly

    Serve the Shiso Bites

    On a serving plate, arrange the fried shiso-wrapped Ahi. Top with the dashi pickled onions, bonito flakes, and a sprinkle of lime zest. Serve immediately.
