Prepare Vegetables
Wash and chop the napa cabbage into bite-sized pieces. Slice shiitake mushrooms. Peel and slice carrots into thin rounds. Chop green onions into 1-inch pieces. Wash the spinach and cut broccoli into florets.

Prepare Noodles
Cook the udon noodles according to package instructions. Drain and set aside.

Prepare Beef (if using)
If using beef, ensure it is thinly sliced and ready to cook.
Cooking

Cook the Ingredients
Once the broth is simmering, add the prepared vegetables to the pot. Allow them to cook for about 3-5 minutes until slightly tender.

Add Noodles and Beef
If using beef, add it to the pot and cook until it’s just done, about 1-2 minutes. Add the cooked udon noodles and stir gently to combine.
Serving

Serve
Ladle the shabu shabu into bowls and serve hot with ponzu sauce on the side for dipping.
